Ingredients
- 1 lb tri-color rotini pasta
- 1 1/2 English cucumber, peeled
- 1 c cherry tomatoes
- 1 (15 ounce) bottle Wish Bone Italian dressing
- 1 c diced ham, such as Smithfield
- salt and pepper, to taste
- 1 c sharp cheddar cheese, finely shredded
Instructions
- Bring a large pot of water to a boil and cook rotini pasta according to package instructions.
- Meanwhile, slice the English cucumber into coins, and then slice the coins into quarters.
- Quarter the cherry tomatoes.
- Drain the pasta as per package instructions and rinse with cold water until the pasta is cool to the touch.
- Transfer the pasta to a large mixing bowl. Pour in ½ of the Italian dressing and toss to coat. Set aside the remainder of the dressing.
- Add in the vegetables and ham, then stir to combine.
- Store in the refrigerator until ready to serve.
- Right before serving, add in the remaining dressing and shredded cheese. The pasta will soak up the first addition of dressing as it sits, so it is important to add more dressing immediately before serving.
