Pecan Havarti Quesadillas

Ingredients

  • 1 (20-count) package of 6-inch flour tortillas
  • 5 c shredded Havarti cheese
  • 3 tbsp. plus 1 teaspoon chopped pecans
  • cooking spray, as needed
  • fig preserves, for serving

Instructions

  1. Set a large sauté pan over medium heat.
  2. To assemble, take one flour tortilla and top with ½ cup of the Havarti cheese and 1 teaspoon chopped pecans.
  3. Top with a second flour tortilla to seal the quesadilla. Spray both sides of the tortilla lightly with cooking spray and place in the sauté pan.
  4. Cook until the tortilla is lightly browned, about 3 to 5 minutes per side. Flip over and continue to cook until both sides are lightly browned, and the cheese has melted.
  5. Remove the quesadilla from the pan and place on a cutting board. Cut the quesadilla into 6 pieces to serve. Continue making quesadillas with the remaining ingredients. Serve with fig preserves.
