Ingredients
- 6 thin slices prosciutto, chopped
- 1/2 tsp. salt
- 1 tbsp. honey
- 1/4 c olive oil
- 1 oz balsamic vinegar
- 1/4 c dark chocolate chips
- 1 1/2 c sliced fresh strawberries
- 1 carton (8 ounces) fresh mozzarella cheese pearls
- 1 1/2 c spinach
- 1 pkg (5 ounces) arugula
- 1/8 tsp. pepper
Instructions
- Preheat the oven to 400° F.
- On a parchment-lined sheet pan, bake the prosciutto for 5 minutes, until crispy.
- Remove to a paper towel-lined plate and set aside.
- Divide the arugula salad and spinach among six salad plates.
- Arrange the cheese, strawberries and prosciutto over top of the arugula.
- Using the melt feature on a stovetop, melt the chocolate, stirring until smooth.
- To the melted chocolate, whisk in the balsamic vinegar, oil, honey, salt and pepper.
- Drizzle over salads.
