Pineapple Casserole Pie (Southern Baked Pie)

Ingredients

  • 1 recipe (package) Southern Baked Pie dough
  • 2 (20-ounce) cans pineapple chunks
  • 5 tbsp. all-purpose flour
  • 3/4 c granulated sugar
  • 1 1/2 c grated sharp cheddar cheese
  • 1 sleeve Ritz crackers, crushed
  • 4 tbsp. butter, melted

Instructions

  1. Preheat the oven to 375° F.
  2. Combine ingredients of a full recipe of Southern Baked Pie dough, per package instructions.
  3. Roll out the dough into a 12-inch circle. Place into a 9-inch pie plate and flute.
  4. Dock (prick) the dough with a fork on the bottom and up the sides of the plate. Place in the freezer for 30 minutes before baking. *This helps set the dough.
  5. Remove the dough from the freezer and line the inside of the dough with parchment paper, completely covering the dough. Fill the pie plate with dried beans. This will ensure that the dough maintains its shape.
  6. Bake for 12-15 minutes. Remove the beans and parchment paper and return the pie plate to the oven and bake for 15-20 additional minutes, or until golden brown. Let cool completely before adding a filling.
  7. Turn the oven down to 350° F.
  8. Drain the pineapple, reserving ½ cup of the juice.
  9. In a large bowl, combine the pineapple with the flour and sugar, and toss to coat.
  10. Layer the pineapple mixture and cheese in the cooled pie crust.
  11. Pour the reserved pineapple juice over the filling.
  12. Sprinkle the crushed crackers over the top and pour the butter over the crackers.
  13. Bake for 40 minutes, until lightly browned.
