Ingredients
- 1/2 c firmly packed light brown sugar
- 1/2 c chopped pecans
- 1 c raisins or dried cranberries
- 1 c shredded sweetened coconut
- 1/4 tsp. ground nutmeg
- 1/2 tsp. ground ginger
- 1/2 tsp. kosher salt
- 1 tsp. ground cinnamon
- 1 tsp. baking soda
- 1 c all-purpose flour
- 1 1/2 c rolled oats
- 2 tsp. pure vanilla extract
- 2 large eggs, at room temperature
- 1 c (2 sticks) unsalted butter, at room temperature
- 1/2 c granulated sugar
- 1 c semi-sweet chocolate morsels
Instructions
- Preheat the oven to 350°F and prepare a half sheet pan (13x18-inches) with edges with baking spray.
- In the bowl of a stand mixer, combine the brown sugar, granulated sugar and butter. Mix on medium speed for 3 to 4 minutes, or until light and fluffy.
- Add in the eggs and vanilla extract. Beat at medium speed, scraping the bowl often, until combined.
- Add in the oats, flour, baking soda, and spices. Beat at low speed, scraping the bowl as needed. Mix until fully combined.
- By hand, stir in the coconut, raisins or dried cranberries, pecans, and chocolate morsels.
- Spread the dough in the greased pan and bake for 25 minutes, or until browned and cooked through.
- Remove from the oven and let cool completely on a wire rack before cutting into bars.
