Chicken Pecan Havarti Quesadillas

Ingredients

  • 1 (20-count) package of 6-inch flour tortillas
  • 1 jar fig preserves
  • 5 c shredded Havarti cheese
  • 1 rotisserie chicken, shredded
  • 3 tablespoons, plus 1 teaspoon chopped pecans
  • Cooking spray, as needed

Instructions

  1. Set a large sauté pan over medium heat.
  2. To assemble, take one flour tortilla, spread fig preserves over top, and top with ½ cup of the Havarti cheese, ¼ cup shredded chicken and 1 teaspoon chopped pecans.
  3. Top with a second flour tortilla to seal the quesadilla. Spray both sides of the tortilla lightly with cooking spray and place in the heated sauté pan.
  4. Cook until the tortilla is lightly browned, about 3 to 5 minutes per side. Flip over and continue to cook until both sides are lightly browned, and the cheese has melted.
  5. Remove the quesadilla from the pan and place on a cutting board. Cut the quesadilla into 4 pieces to serve. Continue making quesadillas with the remaining ingredients.
