Rice Casserole

Ingredients

  • cooking spray
  • 1 extra-large chicken bouillon cube or 2 teaspoons Better Than Bouillon® Roasted Chicken Base
  • 2 c hot water
  • Kosher salt, to taste
  • 4 tbsp. unsalted butter
  • 1 c Ben’s Original ® rice, uncooked
  • 1/2 c chopped celery
  • 1/2 c chopped green onions
  • 1/2 c slivered almonds

Instructions

  1. Preheat the oven to 350°F and prepare an 8 x 8-inch casserole dish with cooking spray.
  2. In a small bowl, dissolve the bouillon cubes (or Better Than Bouillon) in the hot water. Taste the chicken broth and salt to taste.
  3. In a large skillet set over medium heat, melt the butter. Add in the rice and toast the rice until light golden brown in color, about 3 to 5 minutes. Pour in the chicken broth from the previous step and stir well to combine.
  4. Transfer the rice and liquid to a casserole dish and cover. Bake for 30 minutes.
  5. Remove from the oven and stir in the celery, green onions, and almonds. Return to the oven and bake, covered, for another 30 minutes.
  6. Serve warm and enjoy!
