Ingredients
- 2 c spring salad mix
- 4 tbsp. shoepeg corn
- 8 grape tomatoes
- 1 avocado
- tri-colored tortilla strips
- Chipotle Ranch dressing, recipe in Generations cookbook
Instructions
- Cut grape tomatoes into fourths and slice the avocado into thin strips.
- Layer spring mix, Shoepeg corn, tomatoes and sliced avocado on individual plates.
- Before serving, sprinkle tortilla strips on top and drizzle Chipotle Ranch dressing.
