Rosemary Lemonade

Ingredients

Simple Syrup

  • 1 c water
  • 1 c granulated sugar
  • 3 to 4 sprigs fresh rosemary

Lemonade

  • 4 c cold water
  • 1 c fresh squeezed lemon juice (4 to 6 large lemons)
  • ice cubes
  • additional rosemary springs, optional for garnish
  • additional lemon slices, optional for garnish

Instructions

  1. In a small saucepan, combine 1 cup of water and 1 cup of sugar over medium-high heat. Stir occasionally until the sugar is completely dissolved and the mixture comes to a boil.
  2. Remove the pot from the heat and add the fresh rosemary sprigs. Cover the pot and allow the mixture to cool to room temperature to let the flavors infuse, about 1 hour. TIP: The longer it steeps, the stronger the rosemary flavor.
  3. Once cooled, strain the syrup into a large pitcher to remove the springs and any loose leaves.
  4. To the pitcher, add the fresh lemon juice and cold water. Stir well to combine.
  5. Taste the lemonade and adjust as needed. Add more water to make less tart or add more lemon juice if too sweet.
  6. If possible, chill the lemonade in the refrigerator for at least an hour before serving to allow the flavors to meld.
  7. Serve over ice.
  8. Garnish with a lemon slice and extra rosemary, if desired.
