If you don’t have individual gratin dishes, you can use an 8×8 or 9×9 casserole, or even a round baking dish. Just make sure it can stand the heat of your broiler.
Protein may be added as desired, i.e. ground taco meat, chopped fajita meat, smoked sausage or pulled pork.
For extra caramelization, dressed cauliflower may be returned to the rimmed baking sheet and roasted for an additional 6-8 minutes before serving.
