Back to School Brownies

Ingredients

  • 1 1/2 c crunchy peanut butter
  • 1/4 tsp. salt
  • 1 tsp. baking powder
  • 1 c all-purpose flour
  • 2 tsp. vanilla extract
  • 2 large eggs
  • 3/4 c granulated sugar
  • 3/4 c light brown sugar, packed
  • 1/3 c unsalted butter, at room temperature
  • 1 12-oz bag semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F and prepare a 13 x 9 inch pan with baking spray.
  2. In a large mixing bowl, combine peanut butter, butter, brown sugar, granulated sugar using a hand mixer on medium speed.
  3. Beat until creamy, about 45 seconds.
  4. Beat in the eggs, one at a time, then the vanilla.
  5. In a separate bowl, stir together the flour, baking powder, and salt.
  6. With the mixer on medium low, add the flour mixture ¼ cup at a time, beating until well mixed.
  7. Fold in half of the chocolate chips and set the remaining half of the chocolate chips aside for the top.
  8. Spread the batter evenly into the prepared pan and sprinkle with the other half of the chocolate chips.
  9. Bake for 5 minutes.
  10. After 5 minutes, use a butter knife to swirl the melted chocolate chips into the batter before returning the brownies to the oven.
  11. Continue baking for 30 minutes or until the edges are pulling away from the pan.
  12. Allow to cool completely in the pan before slicing into 30 petite, 2 x 2 inch squares.
