Big Mama’s Apple Cake

Ingredients

  • 3 c tart apples
  • 1 tsp. vanilla
  • 1 tsp. allspice
  • 1 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 1/2 c all purpose flour
  • 3 eggs
  • 2 c sugar
  • 1 1/4 c oil
  • 1 c chopped walnuts or pecans

Instructions

  1. Preheat oven to 350 degrees.
  2. Peel and chop apples fine; set aside.
  3. Pour oil, sugar, and eggs in bowl and beat well.
  4. Sift flour, salt, baking soda, baking powder, and spices together.
  5. Add flour mixture to creamed mixture and add vanilla.
  6. Fold in apples and nuts and pour into a tube pan.
  7. Bake for one hour or until toothpick comes out clean.
