Classic Fruit Cobbler

Ingredients

  • 1 tbsp. butter
  • 2 1/2 c ripe fruit (mix of blackberries, raspberries, and blueberries)
  • 1/8 tsp. cinnamon
  • 2 tsp. brown sugar
  • 1 c all purpose flour
  • 1 c granulated sugar
  • 1/2 tsp. kosher salt
  • 2 1/2 tsp. baking powder
  • 1 c milk
  • 1 stick unsalted butter, melted
  • 1/4 tsp. vanilla extract

Instructions

  1. Pre-heat oven to 375º. Grease an 8X8 inch or 9X11 inch baking dish with butter and set aside.
  2. Place fruit into a bowl and toss with cinnamon and brown sugar. This step is called ‘macerate’ which means that the fruit will soften by soaking in its own liquid, which the sugar draws out.
  3. In a separate, large bowl, combine flour, granulated sugar, salt, and baking powder; stir well to combine.
  4. Pour in milk, melted butter, and vanilla and use a wire whisk to mix until just smooth.
  5. Pour batter into greased baking dish, smoothing out the top with a rubber spatula.
  6. Carefully arrange fruit over top of the batter evenly.
  7. Place into the pre-heated oven and bake for 45-55 minutes, until crust pops up over the fruit and is golden.
  8. Remove from the oven and allow to rest for five minutes then, serve.
