Fig Bread

  • Serves: 3 small (3 1/2 x 7 1/2) loaves

Ingredients

  • 1 1/2 c unsweetened applesauce
  • 3 eggs
  • 2 tsp. vanilla extract
  • 3 c flour
  • 3/4 c sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 c fig preserves
  • 1 c pecan pieces

Instructions

  1. Preheat oven to 350.
  2. Beat together applesauce, eggs, and vanilla.
  3. In another bowl sift together flour, sugar, baking soda, salt, and cinnamon.
  4. Add to wet ingredients and stir in fig preserves and pecans.
  5. Spoon into 3 greased and floured small loaf pans.
  6. Bake for 35 minutes.
