Parmesan Polenta

Ingredients

  • 1 tbsp. olive oil
  • 3 tbsp. unsalted butter
  • 1 c shredded Parmesan
  • 1 c medium or coarse ground polenta
  • 1 tsp. rosemary, chopped
  • 1 tbsp. parsley, chopped
  • 1 tbsp. thyme, chopped
  • 1 c heavy cream
  • 2 c water
  • 2 c whole milk
  • 2 tbsp. shallots, chopped
  • 1 garlic clove, minced
  • salt and pepper, to taste

Instructions

  1. In a medium pot, heat the oil on medium-high heat.
  2. Add the garlic and shallot and quickly sauté.
  3. Add the milk, water, and cream and bring to a simmer.
  4. Add the herbs and season with salt and pepper, to taste.
  5. At a simmer, slowly rain in the polenta while whisking.
  6. Bring to a light simmer and add the parmesan and butter, looking for the consistency of a thinner oatmeal.
  7. Check the seasoning again and add some salt and pepper to your liking.
  8. Serve hot.
