Ingredients

  • 3 (14-ounce) cans sweetened condensed milk
  • 1 1/2 c freshly squeezed lemon juice
  • 1 tbsp. freshly grated lemon peel
  • 1 c (2 sticks) unsalted butter, at room temperature
  • 1 1/2 c firmly packed light brown sugar
  • 2 1/4 c all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/3 tsp. kosher salt
  • 1 1/2 c old fashioned rolled oats

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch baking dish with baking spray.
  2. Mix the condensed milk, lemon juice, and grated lemon peel in a mixing bowl. Set aside.
  3. In the bowl of a stand mixer, cream the butter and sugar, until fluffy, about 3 to 5 minutes.
  4. Add in the flour, baking powder, salt, and rolled oats. Mix until crumbly.
  5. Firmly press half of the crumbs into the bottom of the greased baking dish.
  6. Pour the sweetened condensed milk mixture on top of the crust. Cover with the remaining crumb mixture and press down gently.
  7. Bake for 25 to 30 minutes or until brown around the edges.
  8. Chill completely before cutting. This recipe is best if you are able to allow the cheesecake squares to chill overnight before cutting and serving.
