Ingredients

- 1 extra-large chicken bouillon cube or 2 teaspoons Better Than Bouillon® Roasted Chicken Base
- 2 c hot water
- Kosher salt, to taste
- 4 tbsp. unsalted butter
- 1 c Ben’s Original ® rice, uncooked
- 1/2 c chopped celery
- 1/2 c chopped green onions
- 1/2 c slivered almonds
Instructions
- Preheat the oven to 350°F and prepare an 8 x 8-inch casserole dish with cooking spray.
- In a small bowl, dissolve the bouillon cubes (or Better Than Bouillon) in the hot water. Taste the chicken broth and salt to taste.
- In a large skillet set over medium heat, melt the butter. Add in the rice and toast the rice until light golden brown in color, about 3 to 5 minutes. Pour in the chicken broth from the previous step and stir well to combine.
- Transfer the rice and liquid to a casserole dish and cover. Bake for 30 minutes.
- Remove from the oven and stir in the celery, green onions, and almonds. Return to the oven and bake, covered, for another 30 minutes.
- Serve warm and enjoy!
