Spicy Oatmeal Raisin Bars

Ingredients

  • 1/2 c firmly packed light brown sugar
  • 1/2 c granulated sugar
  • 1 c (2 sticks) unsalted butter, at room temperature
  • 2 large eggs, at room temperature
  • 2 tsp. pure vanilla extract
  • 1 1/2 c rolled oats
  • 1 c all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 c raisins or dried cranberries
  • 1 c shredded sweetened coconut
  • 1/2 c chopped pecans
  • 1 c semi-sweet chocolate morsels

Instructions

  1. Preheat the oven to 350°F and prepare a half sheet pan (13x18-inches) with edges with baking spray.
  2. In the bowl of a stand mixer, combine the brown sugar, granulated sugar and butter. Mix on medium speed for 3 to 4 minutes, or until light and fluffy.
  3. Add in the eggs and vanilla extract. Beat at medium speed, scraping the bowl often, until combined.
  4. Add in the oats, flour, baking soda, and spices. Beat at low speed, scraping the bowl as needed. Mix until fully combined.
  5. By hand, stir in the coconut, raisins or dried cranberries, pecans, and chocolate morsels.
  6. Spread the dough in the greased pan and bake for 25 minutes, or until browned and cooked through.
  7. Remove from the oven and let cool completely on a wire rack before cutting into bars.
