Thai Green Beans

Ingredients

Green Beans

  • sesame seeds
  • green onion

Garnish

  • salt, to taste
  • 1/4 c water
  • 1/4 tsp. red pepper flakes, optional
  • 1 tsp. rice wine vinegar
  • 1 tsp. freshly grated ginger
  • 2 tbsp. creamy peanut butter
  • 1/2 tbsp. toasted sesame oil
  • 1 tbsp. reduced sodium soy sauce or coconut aminos

Sauce

  • 1 lb green beans, rinsed and ends trimmed
  • 2 cloves garlic, thinly sliced
  • 1/2 tbsp. toasted sesame oil
  • 1 tablespoon roasted peanuts

Instructions

    Sauce

    1. Place a large skillet over medium heat. Add sesame oil and garlic and sauté for 30 seconds or until garlic is fragrant.
    2. Immediately add green beans, stirring frequently until beans are slightly golden brown, about 5-8 minutes.
    3. While the beans are cooking, make the sauce.
    4. In a small saucepan over medium-low heat, add all of the sauce ingredients and whisk to combine.
    5. Once the green beans are cooked and slightly golden and al dente, reduce heat to low and pour sauce over the beans.
    6. Stir to coat the beans, then cover and simmer for a few minutes to allow the beans to continue cooking.
    7. Taste and add more salt, if necessary.
    8. Garnish with sliced green onion, sesame seeds and roasted peanuts.
