Ingredients
- 8 oz cream cheese, at room temperature
- 8 oz Cracker Barrel white cheddar cheese, hand shredded
- 1 c Craisins (dried cranberries)
- 1/2 c thinly sliced green onions
- 1/4 c cup fresh parsley, chopped
- 1 1/3 c toasted pecan halves, chopped and divided
- 1/4 tsp. garlic powder
- 1/8 tsp. salt
- 1/8 tsp. pepper
Instructions
- Use a wooden spoon or sturdy rubber spatula to mix the cream cheese and cheddar in a large mixing bowl until evenly combined.
- Add the Craisins, green onions, parsley, ⅓ cup pecans, garlic powder, salt and pepper to the cheese and mix until incorporated.
- Spread the remaining chopped toasted pecans in a pie plate or shallow bowl.
- Form the cheese mixture into two balls. Roll the cheese balls around in the pecans to completely coat the outside of the ball.
- Completely cover the cheese ball with plastic wrap. Chill in the fridge for at least 4 hours or overnight to allow the flavors to come together. You can freeze the other ball to use later.
- Unwrap and serve with crackers, such as Townhouse Flipsides.
