Caramelized Onion Sour Cream Dip

Ingredients

  • 2 tbsp. olive oil
  • 1 Vidalia onion, finely chopped
  • 1/2 tsp. sugar
  • 1/2 tsp. kosher salt, divided
  • 2 tsp. minced garlic
  • 1 c sour cream
  • 1/2 tsp. onion powder
  • 1/4 tsp. black pepper
  • chopped scallions, for topping

Instructions

  1. Heat the oil in a large skillet over medium heat and add the onion, sugar and ¼ teaspoon of the salt. Cook, stirring, until the onions are golden brown and caramelized, approximately 12 to 15 minutes. Add the garlic and cook for 2 more minutes. Let cool.
  2. Combine the onion mixture with the sour cream, onion powder, pepper and remaining ¼ teaspoon salt.
  3. Taste and adjust the seasoning as desired.
  4. Cover and refrigerate until ready to serve.
  5. The remaining sauce can be refrigerated for up to one week.
