Blackened Sea Bass

Ingredients

  • 2 6 oz. sea bass fillets
  • blackened seasoning
  • olive oil, divided

Instructions

  1. Preheat the oven to 400°F.
  2. Drizzle olive oil over top of the sea bass and rub into both sides. Sprinkle each side of the sea bass generously with blackened seasoning and pat the seasoning into the fish.
  3. Heat a cast-iron skillet to medium heat.
  4. Pan sear the sea bass for 3 minutes each side, until a crispy brown. Note: You should hear the sizzle when you place the sea bass in the pan. If you do not, the pan is not ready.
  5. Place the pan in the oven for 5 minutes.
  6. Remove the pan from the oven and let the sea bass rest for 3 to 5 minutes.
