Cheese Grits

Ingredients

  • 4 c low-sodium chicken broth
  • 1 c Quaker Old-Fashioned grits
  • 1 c sharp cheddar cheese, hand-shredded
  • 1/2 c Parmesan cheese, hand-shredded
  • 2 tbsp. unsalted butter
  • salt and pepper, to taste

Instructions

  1. In a large saucepan, bring chicken broth to a full rolling boil.
  2. Whisk in grits and beat vigorously for 30 seconds.
  3. Reduce heat to medium-low.
  4. Cook, stirring constantly, for 2 minutes.
  5. Reduce heat to low and cook for 20 more minutes, stirring frequently to prevent sticking.
  6. Stir in the cheeses and butter.
  7. Season to taste and serve immediately.
