Company Cornbread

Ingredients

  • 1 tbsp. Wesson vegetable oil, or bacon drippings
  • 1 c self rising corn meal
  • 2 large eggs
  • 1/2 c Wesson vegetable oil
  • 1/2 c creamed corn
  • 8 oz sour cream

Instructions

  1. Pour 1 tablespoon of oil or bacon drippings into the bottom of a 10- inch cast iron skillet. Place the skillet in the oven and preheat to 450 degrees F.
  2. Meanwhile, stir together the corn meal, eggs, oil, creamed corn, and sour cream.
  3. Once the pan and oven are preheated, very carefully move the pan forward and pour the batter directly into the skillet. Be sure you are using high quality oven mitts to handle the cast iron, or have an adult help you with this step.
  4. Bake until deep golden brown, about 20 minutes.
  5. Remove from the oven, with oven mitts or an adult\'s help, and set on a trivet to cool for 10 minutes.
  6. Slice into wedges and serve warm with butter.
