Ivy Odom’s Onion Dogs

Ingredients

Caramelized Onions

  • 2 tsp. olive oil
  • 1 medium sweet onion, thinly sliced (2 cups)
  • 1/2 tsp. kosher salt

Hot Dogs and Toppings

  • Brioche hot dog buns, warmed
  • mayonnaise
  • pepper jack cheese slices, 1 per bun
  • hot cooked jumbo all-beef franks, 1 per bun
  • caramelized onions (see above)
  • thinly sliced green onions
  • crispy fried onions, such as French’s

Instructions

  1. In a medium nonstick skillet, heat oil over medium heat.
  2. Add onions to skillet and cook, stirring occasionally, until softened, about 10 minutes. Continue to cook, stirring occasionally, being sure to prevent burning, until onions have turned a deep caramel color, about 20 more minutes.
  3. Add 1 tablespoon of water at a time, if needed, to prevent over-browning, and cook until water totally evaporates.
  4. Stir in salt, then remove from heat.
  5. Use immediately or store in an airtight container in the refrigerator for up to 5 days.
  6. Warm before serving.
  7. To assemble: Spread mayonnaise in each of the warmed buns. Place a slice of cheese into each bun, then add hot, cooked franks to buns. Dress hot dogs with toppings as desired.
