Ingredients
- 2 1/2 c diced Vidalia onions, about 3 medium-sized onions
- 1/4 c parsley, finely chopped
- 3/4 c flour
- 1 1/2 tbsp. sugar
- 2 tsp. baking powder
- 1 1/2 tsp. seasoning salt
- 1/8 tsp. cayenne pepper
- 1/2 tsp. garlic powder
- black pepper, optional
- 3/4 c milk
- vegetable oil, for frying
- salt, as needed
Instructions
- In a bowl, mix the diced Vidalia onions and parsley.
- In another bowl mix together the flour, sugar, baking powder, salt, cayenne, garlic powder and a dash of black pepper; mix to combine well.
- Add in the milk and whisk until thoroughly combined.
- Add in the chopped onions and parsley and mix with a wooden spoon until combined.
- In a large non-stick frying pan, heat a small amount of oil, about ¼ to ½”, to medium-high heat, adding in more oil as needed. Note: The patties will absorb too much oil if you add in a large amount of oil at one time.
- Drop the batter from a tablespoon into the heated oil. If the batter is thick, you can use another spoon to push the batter into the pan.
- Once in the frying pan, flatten slightly with the spoon or spatula.
- Sprinkle it with salt.
- Fry until crispy and brown on both sides, about 1½ to 2 minutes per side.
- Remove the patties to a paper towel-lined plate.
- Serve with your favorite dipping sauce(s).
