Ingredients
Crust
- 2 1/4 c Ritz cracker crumbs (Everything flavor)
- 1/2 c (1 stick) salted butter, melted
Filling
- 4 medium Vidalia onions, thinly sliced
- 2 tbsp. butter (salted or unsalted)
- 2 eggs
- 3/4 c milk
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 c grated sharp cheddar cheese
- paprika, for garnish
Instructions
- Preheat the oven to 350°F .
- In a bowl, mix the Ritz cracker crumbs and ½ cup of melted butter.
- Press mixture in an 8-inch pie plate and set aside.
- In a large skillet, melt 2 tablespoons of butter over medium heat and sauté the onions until translucent, do not brown. This takes about 10 minutes.
- In the meantime, in a liquid measuring cup, whisk the eggs, milk, salt and pepper.
- When translucent, spoon the onions over the pie crust.
- Pour the egg mixture over top of the onions.
- Sprinkle the pie with cheese and paprika.
- Bake for 30 minutes, until it’s firm in the center.
- Serve warm, or at room temperature.
