Vidalia Onion Patties

Ingredients

  • 2 1/2 c diced Vidalia onions, about 3 medium-sized onions
  • 1/4 c parsley, finely chopped
  • 3/4 c flour
  • 1 1/2 tbsp. sugar
  • 2 tsp. baking powder
  • 1 1/2 tsp. seasoning salt
  • 1/8 tsp. cayenne pepper
  • 1/2 tsp. garlic powder
  • black pepper, optional
  • 3/4 c milk
  • vegetable oil, for frying
  • salt, as needed

Instructions

  1. In a bowl, mix the diced Vidalia onions and parsley.
  2. In another bowl mix together the flour, sugar, baking powder, salt, cayenne, garlic powder and a dash of black pepper; mix to combine well.
  3. Add in the milk and whisk until thoroughly combined.
  4. Add in the chopped onions and parsley and mix with a wooden spoon until combined.
  5. In a large non-stick frying pan, heat a small amount of oil, about ¼ to ½”, to medium-high heat, adding in more oil as needed. Note: The patties will absorb too much oil if you add in a large amount of oil at one time.
  6. Drop the batter from a tablespoon into the heated oil. If the batter is thick, you can use another spoon to push the batter into the pan.
  7. Once in the frying pan, flatten slightly with the spoon or spatula.
  8. Sprinkle it with salt.
  9. Fry until crispy and brown on both sides, about 1½ to 2 minutes per side.
  10. Remove the patties to a paper towel-lined plate.
  11. Serve with your favorite dipping sauce(s).
