Vidalia Onion Pie

Ingredients

Crust

  • 2 1/4 c Ritz cracker crumbs (Everything flavor)
  • 1/2 c (1 stick) salted butter, melted

Filling

  • 4 medium Vidalia onions, thinly sliced
  • 2 tbsp. butter (salted or unsalted)
  • 2 eggs
  • 3/4 c milk
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 c grated sharp cheddar cheese
  • paprika, for garnish

Instructions

  1. Preheat the oven to 350°F .
  2. In a bowl, mix the Ritz cracker crumbs and ½ cup of melted butter.
  3. Press mixture in an 8-inch pie plate and set aside.
  4. In a large skillet, melt 2 tablespoons of butter over medium heat and sauté the onions until translucent, do not brown. This takes about 10 minutes.
  5. In the meantime, in a liquid measuring cup, whisk the eggs, milk, salt and pepper.
  6. When translucent, spoon the onions over the pie crust.
  7. Pour the egg mixture over top of the onions.
  8. Sprinkle the pie with cheese and paprika.
  9. Bake for 30 minutes, until it’s firm in the center.
  10. Serve warm, or at room temperature.
