Cranberry Pecan Cheese Ball

Ingredients

  • 8 oz cream cheese, at room temperature
  • 8 oz Cracker Barrel white cheddar cheese, hand shredded
  • 1 c Craisins (dried cranberries)
  • 1/2 c thinly sliced green onions
  • 1/4 c cup fresh parsley, chopped
  • 1 1/3 c toasted pecan halves, chopped and divided
  • 1/4 tsp. garlic powder
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Use a wooden spoon or sturdy rubber spatula to mix the cream cheese and cheddar in a large mixing bowl until evenly combined.
  2. Add the Craisins, green onions, parsley, ⅓ cup pecans, garlic powder, salt and pepper to the cheese and mix until incorporated.
  3. Spread the remaining chopped toasted pecans in a pie plate or shallow bowl.
  4. Form the cheese mixture into two balls. Roll the cheese balls around in the pecans to completely coat the outside of the ball.
  5. Completely cover the cheese ball with plastic wrap. Chill in the fridge for at least 4 hours or overnight to allow the flavors to come together. You can freeze the other ball to use later.
  6. Unwrap and serve with crackers, such as Townhouse Flipsides.
