Southern Peanut Coleslaw

Ingredients

  • green cabbage, 3 cups thinly sliced
  • 1 tbsp. of black pepper
  • 1 tbsp. salt
  • 1/2 c peanut oil
  • 2 garlic cloves, minced
  • 1/2 tsp. celery seeds
  • 1/4 tsp. cayenne pepper
  • 1 c brown sugar
  • 1 c apple cider vinegar
  • 2 tsp. Worcestershire sauce
  • 1/2 c peanut butter
  • 1 c peanuts, coarsely chopped, divided
  • 1 c Cosmic apples
  • 1 c sesame sticks
  • 2 red onions, thinly sliced
  • 1 1/2 c shredded carrots
  • 1/4 c parsley, coarsely chopped

Instructions

  1. Combine green cabbage and cabbage and add onions.
  2. Toss in sesame sticks, apples and ½ cup peanuts.
  3. Prepare dressing in a food processor by combining peanut butter, Worcestershire sauce, vinegar, sugar, cayenne, celery seed and garlic. Pulse to combine.
  4. With the food processor running, pour in the oil in a thin stream to form a thick creamy dressing.
  5. Season with salt and pepper, pulsing the mixture to combine.
  6. Toss coleslaw mix with the dressing, top with remaining peanuts and parsley.
  7. Serve cold.
